To make the gin infusion I did two infusions, a quick steep with fennel seeds, and then longer with fennel bulbs; both harvested from our home garden, this was to maximise the flavour infusion of fennel. There is a subtle flavour resembling sambuca resulting in it being a refreshing gin infusion.
